TACO TIME: Tacos de Lengua @ Cantina La Ribera

This huge, traditional cantina, is located in Colonia Doctores, just east of colonia Roma, which may scare some - the area has the rough reputation that N.Y.'s south Bronx had in the '70's. But, in fact, the cantina, really a restaurant with bow-tie clad waiters and a full menu, attracts doctors and staff from nearby Hospital General and is perfectly safe. The tacos of buttery tender lengua – tongue – are justifiably well known. We, in the Jewish community, grew up eating tongue, but as I knew it, is was always presented as a slippery luncheon meat. When I grew old enough to realize what it really was I stopped eating it. It wasn't until decades later, when I came to Mexico that I learned to love lengua - it is one of the most succulent and flavorful parts of the cow.
